We have been blessed with a huge crop of divine tomatoes this year, so we’ve been eating them like crazy with every meal. This is not a chicken broth recipe, but it goes great as a side salad with rich dishes like this bacon leek risotto.

Easy Tomato Salad Recipe

It is scrumptious, adaptable, and simple to prepare. fully ripe cherry tomatoes, fresh basil, red onion that has been soaked, balsamic vinegar, and olive oil are used in this dish. Use either cherry tomatoes or a couple of pounds of regular tomatoes to cut the quantity in half. The recipe makes enough tomatoes for 4 to 6 side salads.
Ingredients
- 8 tomatoes
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp diced oregano
- 2 tbsp parsley
- 2 tbsp basil from your garden
- To taste salt and pepper
- 2 cloves diced garlic
Instructions
- Simply slice up your tomatoes with a nice sharp knife, whisk liquids with salt and pepper (to taste) and toss with herbs and tomatoes in a stainless mixing bowl.
- If you chop the tomatoes more finely and add two more cloves of garlic, you can also make this into a bruschetta by spooning it onto crisp slices of french bread, sourdough, or ciabatta.
