Habanero Oil Recipe

Although habanero peppers are renowned for their high levels of heat, they also have a mild fruity flavor. The habaneros' flavor and depth are enhanced by being charred. This versatile sauce goes well with everything from pizza to eggs to steak to salmon. It will keep for months in your refrigerator. Sometimes, a good condiment is the only thing that separates mediocre food from delicious food.

Ingredients
  

  • 2 fresh habaneros cored
  • 2 seeded
  • 2 sliced into chunks
  • 2 cloves garlic
  • to taste salt
  • 2 cups olive oil
  • for storage glass bottle

Instructions
 

  • I use my Cuisinart for this because its the easiest way to get it done fast and the cleanup is simple.
  • Add all ingredients to Cuisinart and blend until smooth and no chunks remain. strain through a fine mesh metal strainer into a bowl or measuring cup 2-3 times until no solids/froth remains. You will need to strain a couple more times over the next couple of days.
  • Pour through a funnel into a glass bottle and cork to seal. It's a beautiful light green color when properly strained and there shouldn’t be too many cloudy solids settled in the bottom of the bottle.

Notes

Any flavoring oil that has been removed from the refrigerator poses very substantial safety risks. Oils are an example of an anaerobic (oxygen-free) environment where the deadly bacterium botulism can grow. So, take note!
