We have been blessed with a huge crop of divine tomatoes this year, so we’ve been eating them like crazy with every meal. This is not a chicken broth recipe, but it goes great as a side salad with rich dishes like this bacon leek risotto.
This is a simple savory salad that goes well with almost everything and takes about 5 minutes to make.
serves 6 (or however many you want depending on how many tomatoes you have)
- A variety of 6-8 large tomatoes (or a mix of sizes) sliced into thick slices and cut in half into bite sized pieces.
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp each diced oregano, parsley, basil from your garden
- salt and pepper
- 2 cloves diced garlic (optional if you want a bit more zing)
If you chop the tomatoes more finely and add two more cloves of garlic, you can also make this into a bruschetta by spooning it onto crisp slices of french bread, sourdough or ciabatta.
